I am a big fan of burgers on a charcoal grill. My dad has perfected the art of the charcoal burger, but this weekend while Brent's parents were in town, we decided to change it up a little! We stuffed them! Play around with this recipe...I've read minced onion is really good or maybe chop up some jalapenos. We will be experimenting with this one all spring and summer!
Cheddar & Bacon Stuffed Burgers
1 1/2 to 2 lbs ground beef
4 oz medium cheddar cheese
4 slices bacon, crumbled
4 Italian style hamburger buns
Pat out 8 very thin hamburger patties (about 1/2 inch thick). In center of 4 patties, push down a small area for filling. Cube the cheese into very small pieces. Place 1/4 of the cheese and a 1/4 of the bacon in the burger. Top with another thin patty, press edges together to seal and press burger down to flatten. Be sure edges are completely sealed and together. Grill on a charcoal grill until done.

Apricot Chicken
I do not have a good relationship with soy sauce. I've tried to eat Asian food, and I just can't do it. Brent really likes it though, so this recipe is kind of a compromise. It has a little bit of an Asian flavor to it, but without the soy sauce. I have to credit this recipe to my former roommate, Meredith!
Apricot Chicken
6 chicken drumsticks, skinless
8 oz Catalina dressing
8 oz apricot preserves
1 pkg Lipton onion soup
Mix together and bake at 350 degrees for 1 hour uncovered. Serve over rice.

Slow Cooker Cubed Steak
Today's recipe is for cubed steak. I have to credit my parents with this recipe. They would make this often on Sundays and making it now reminds me of home. I have to warn you, since it cooks all day, it can smell quite strong. I have even placed it in the garage to cook so that the house wouldn't smell. It's worth it though!
Slow Cooker Cubed Steak
2-4 pieces of cubed steak, depending on how many you want to serve
1 packet onion soup mix
1 can cream of mushroom soup
1 can full of water
Place meat inside of slow cooker. Top with water, onion soup mix, and cream of mushroom soup. Cook on low 6 hours or high 4 hours. Serve over rice.
